Yields: 12 muffin sized casseroles
Ingredients:
- 2 pieces of whole-wheat bread (sandwich size)
- 8 eggs
- 1/2 cup milk
- salt and pepper, to taste
- 4 oz grated cheese (we used Mozzarella)
- 1/2 lb cooked and crumbled bacon or breakfast sausage
- Foil muffin holders (optional - but will need to grease the tins without)
- Preheat oven to 350*F
- Distribute 12 foil muffin holders into muffin pan (or grease pan)
- Cut the whole-wheat bread into half inch squares and evenly distribute them on the between each muffin cup
- In a mixing bowl or large measuring cup, thoroughly whisk together the eggs and milk. Add salt and pepper as desired
- Evenly distribute the egg mixture into each muffin cup. It's okay if bread pieces float to the top
- Sprinkle an equal amount of the grated cheese and the crumbled bacon or sausage into each muffin cup on top of the egg mixture
- Bake for 15 minutes or until eggs are set
- Enjoy immediately or refrigerate/freeze for another day
This was a first attempt picture. Next time I think we may crumble the bacon a little better and cool the muffins a bit longer to see if it prevents them from falling in.
