Yields: 14-16 small brownie squares
Ingredients:
- 3/4 cup whole-wheat flour
- 1/2 cup unsweetened cocoa
- 1/2 tsp baking powder
- 1/2 cup coconut oil
- 1/2 cup of honey or maple syrup (I've only tried honey at this point)
- 1 Tbsp pure vanilla extract
- 1 egg
- 1/4 cup chopped nuts (optional)
- Preheat oven to 350*F a grease a 9x9 inch square glass baking dish with oil or butter (I used a 9x7 because it's the closest I have)
- Whisk together the dry ingredients in a bowl including the flour, cocoa and baking powder and set aside
- In a small pot on the stove, melt the coconut oil together with the honey (or maple syrup) and vanilla extract
- Once melted, whisk contents of pot into the dry ingredients. Add the egg and keep whisking until it is mixed together thoroughly.
- (Optional) If using nuts, fold them into the batter with a spatula
- Pour the batter into the glass baking dish and bake for 16 - 20 minutes or until a toothpick inserted comes out clean
- Enjoy or store in an air-tight container at room temperature
