Yields 4 to 6 servings
Ingredients:
- 1 lb lean ground beef
- 2 cups sliced mushrooms
- 1 small onion, chopped
- 2 tsp Worcestershire sauce
- 1 tsp dried oregano leaves
- 1 tsp ground nutmeg
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 pkg (10 oz.) frozen chopped spinach, thawed
- 4 large eggs, lightly beaten
- 1/3 cup grated Parmesan cheese
- Spray large skillet with nonstick cooking spray
- Add ground beef, mushrooms and onion. Cook over medium-high heat for 6 - 8 minutes or until onion is tender
- Add Worcestershire, oregano, nutmeg, garlic powder and salt
- Cook until meat is browned
- Drain spinach and stir into meat mixture
- Push mixture to one side of the pan and reduce heat to medium
- Pour eggs into other side of pan. Cook without stirring 1 - 2 minutes or until set on the bottom
- Lift eggs to allow uncooked portion to flow underneath. Repeat until softly set
- Gently sir into meat mixture and heat through
- Stir in cheese
