Joe's Special

This is what I referred to as the Ghetto Asian Mac without the Asian

From: Favorite Brand Name Low-Carb Recipes

Yields 4 to 6 servings

Ingredients:
  • 1 lb lean ground beef
  • 2 cups sliced mushrooms
  • 1 small onion, chopped
  • 2 tsp Worcestershire sauce
  • 1 tsp dried oregano leaves
  • 1 tsp ground nutmeg
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 pkg (10 oz.) frozen chopped spinach, thawed
  • 4 large eggs, lightly beaten
  • 1/3 cup grated Parmesan cheese
Directions:
  1. Spray large skillet with nonstick cooking spray
  2. Add ground beef, mushrooms and onion.  Cook over medium-high heat for 6 - 8 minutes or until onion is tender
  3. Add Worcestershire, oregano, nutmeg, garlic powder and salt
  4. Cook until meat is browned
  5. Drain spinach and stir into meat mixture
  6. Push mixture to one side of the pan and reduce heat to medium
  7. Pour eggs into other side of pan.  Cook without stirring 1 - 2 minutes or until set on the bottom
  8. Lift eggs to allow uncooked portion to flow underneath. Repeat until softly set
  9. Gently sir into meat mixture and heat through
  10. Stir in cheese
Serve with salsa and toast, if desired
